Candied Kumquats These are really pretty and the vanilla adds a lovely layer to the flavour. You can also make this with calamondins or limequats. 3 cups kumquats 2 cups water 2 cups sugar 1/2 tsp good vanilla Slice kumquats crosswise and remove seeds. Heat water and sugar in saucepan over medium heat, stirring until sugar dissolves. Add the vanilla and the sliced kumquats. Reduce heat and simmer until kumquat slices become translucent. Set aside to cool. Drain kumquats, reserving syrup. Place kumquats in a jar, along with 1/4 cup of the syrup. Heat remaining syrup until volume is reduced to about 1 or 1 1/4 cups. Pour in jar over kumquats. Cover and refrigerate till ready to use. Can be served over pound cake, ice cream, cheesecake or other desserts. I love to use it to top Kumquat Pie. |
